if i go to a shop to get my skis mounted, and the bindings that I want on these skis are already on other skis, is it proper etiquette to take sed bindings off the old skis before. or is it fine/prefered to just bring in the skis. this might just seem like a stupid question.
If you have the proper driver bits / screwdriver to take your bindings off then go for it. Otherwise I wouldn’t worry, it literally takes them maybe 12 seconds to get all 16 screws off.
if you bring in your old ski with bindings they will fill the old binding holes so the ski can be mounted again and the ski won’t warp. However this is considered a remount so it might be a few bucks more as opposed to just handing them bindings and a unmounted ski which shops consider just a mount which is cheaper. At least that’s the way my shop does it.

working at one my self and no one cares, it takes us 2 seconds to take them off. If you are able to do so before then that's killer
Since you’re asking, I’m guessing you don’t have screw hole plugs. If you’re a curious person, removing the bindings yourself and then filling the holes could be a good first (easy) step in some standard ski care/maintenance. It isn’t hard, you just need the correct materials- a proper fitting screwdriver to remove the bindings, some wood glue and some plugs, a hammer and a knife or razor blade. Plugs look like this
After you remove the bindings, put a drop of glue in each hole, then hammer the plugs in. The plugs will most likely stick out slightly, so use your blade to slice them off level with the surface of the ski. Then wipe away the excess glue, let them dry for a few hours and you’re good to go for storage or sale or whatever.

I brought in a pair of outdated bindings to mount into some new old stock dynastar skinny skis a few years ago at my local. I knew it was a longshot if they would even touch them for liability, but instead of denying me service they took the time and showed me how to mount them myself. I went home, took things slow and ended up with a decent mounted pair of skis. $50 saved and a lifelong skill acquired.

If you do choose to take the bindings off yourself make sure to not lose any of the hardware that comes in bindings (loose parts, especially screws) as it is a pain for the tech to find the correct size or part if they are not found. I have witnessed many an angry tech trying to find one single screw. If you are not wanting to take bindings off though, its chill to give old skis with bindings on and new skis with no bindings to the shop.
I had a shop try to charge me like $10 to remove bindings before mounting them on my new skis. I asked the tech if I could borrow his posidriver and he let me take the bindings off on the floor of the shop.
The shop was in LA, to be fair. We love a good upcharge in the city of Angels.
