I would shoot for close to your actual height. Give or take a bit longer or a bit shorter isn't the end of the world. Part of it is personal preference, part of it would be like if it was a pow ski you want to buy it a lil long, etc. Being taller it will be harder to find super long skis but they exist for sure. I'm 6 ft tall and I ride a 181-186 depending on the ski and the purpose and what l'm feeling. You being a bit taller than me it sounds like, 185ish+ would be atequite for you I'm sure. And to be honest, the moment I'm skiing I don't even notice the length difference for myself between 181-186 because the skis themselves are good and work as intended. I think shops generally also say that it depends on your ability level. Like intermediate skiers should roughly have a ski between chin and eye level length when standing on end. Beginner somewhere below that and advanced from there or above. There are some slight advantages to longer skis and I don't know your ability level, but get a ski you think looks fun and is relatively in your size range.
