Software aside, cuz I can't figure that shit out either.
Most of it is figuring out what the sun is going to do to your shots. Bright sunny day? Keep the sun to your back. More overcast it is the more the sun can move into your shot.
Trees are going to be a challenge, but mtb access let's you get that sweet sweet golden hour light. Ride at dawn. Also dusk.
With lower res stuff, go for closer shots. Panning will be hard AF, but it's actually a strong point in the edits you posted. Make it harder to keep track of your subject. More quick action shots, and some fun/goofy heading up/down from riding for filler.
Without being a super bad ass, it'll be hard to get something longer than about a minute, unless you get the whole summer in one video. If you want longer, break it up with some supping/hiking/diving/etc and more goofy shit in between.
