How to make skis edge less

I'd utilize a high quality tape thats a little firm, something like Gorilla tape and then run the tape along the sidewall from the tip to tail of the ski creating a "mold" for the epoxy to prevent it from running down the sidewall.
I'd also use West Systems G/Flex epoxy.

My skis have a fair bit of missing edge and it hasn't seen to really affect the sidewall or core at all. Do you use them to ride all mountain stuff to?

I hope these pictures help illustrate what I was trying to articulate OP... make sure to use a high quality tape and let the epoxy fully set until it's hard, then wait an additional 24 hours to peel off the tape.
Do this in a semi-heated environment to help the epoxy set properly. You can always file down/scrape (do not try and cut) the excess epoxy with sandpaper or a ski edge file.

The "edge" had held up to a beating, the epoxy slides really well.

My mock up tape job... make sure to use a high quality tape like gorilla tape or painters tape so you get a solid 90° between the base and tape, this serves as the template for your new "edge".

The less tape you have over the base of the ski the better, this allows for proper securing of the tape so you can achieve that desired 90° "edge" upon peeling it off.
tape, room above 55°F, West Systems G-flex epoxy, an edge file, and a flat surface are all you need.
