Title sort of lays it out.. anyone use them? Sort of like what’s in the photo? I just found the ones that came with my boots and was curious of the pros / cons and if they’re recommended? Easier on knees or anything?
They're commonly used to create a steeper boot board angle for those with very limited ankle range of motion. I can think of a handful of other case by case scenarios to why a heel lift would be warranted but if you're not having any issues, don't bother with them.

These don’t come stock in boots, they’re added to boots by fitters….. aside from what was stated above, they can also be used to create the illusion of having a bit more room in the toe area. It pulls the foot up and therefore away from the front, as well as used to raise a skiers calf higher above the liner if they feel that the upper of the boot is too tight (higher up means that the boot would close on a narrower part of the lower leg).
