They seem to have such a good rep and everyone is hyping them but ON3Ps are just so expensive and I live in Europe so shipping is like a 100$... Is there any ski from a "global" ski brand that resembles the Jeffrey 102s?

Great ski. A bit different shape and rocker lines, but similar use and and what both designs excel at - and usually relatively easy to find at a discount in Euroland. ON3Ps will have more rocker, but stiffer flex, Völkls have a rounder flex but less splay - so in the end - not to dissimilar ride from a shape point of view. ON3Ps are damper. Völkls do not have the same build quality as ON3Ps though nor are they as bombproof, but still great skis.
The best time of year to buy cheaper ON3Ps is during their spring sale. They usually have some blemish skis (slight "defect most other other manufacturers wouldn't even label as a defect) and sample skis (used for product photos, so same as last bracket) that can be bought at discounted prices. You missed out on this years sale, but there is always next year eh.

Sometimes it is fun to save up and go for those dream items that just makes you sooo stoked to use them. Besides, with ON3P you get what you pay for, so if your standards/preferences involve spending less than retail then now you now when to get said skis at a discount :)
And as mentioned, the spring sale runs 500-650usd + shipping - and shipping will always be around the 99mark or more when shipping sales items across the pond. It is kinda hard to be salty about it as the only reason we find it to be high is that the sales and shipping policies can be so incredibly low here in Euroland.
I would also ask you to please refrain from ragging on indie ski companies because they charge you what the shipping actually costs, just because Sport Bittl and Sport Conrad does not. The latter two sell 1 000 000% more stock, probably get way lower rates from the shipping companies and their business models are based on a lower pr item profit margin to break even (one that probably would put ON3P or Moment out of business real quick at their current volume of sales).
Until then, skis like Revolts are damned good skis and can be had at lower prices. Jubilations :)

SessionLiberty does not use full bamboo, I believe they have some bamboo stringers.
