Quiche or frittata is a good call, you can put an ridiculous amount of cheese in quiche, also pro tip...use half n half or whipping cream in your quiche, it takes it to the next level.
I forget which president but there's a story about some ludicrously big block of cheese at the White House back in the day, like 1000 pounds or something. IIRC it mostly got finished by a huge group of shitfaced guests at the White House during a party.
