AaronO.I wear a size 11 shoe as well and rode 28.5 full tilts for like 7 years with no problem even though my toes do touch the fronts a little bit. I’ve found really keeping your stance and forward lean proper helps a lot with the toe problem, but they only ever really hurt for me when I was breaking them in.
Also I bought a pair of 29.5 first chair 10’s and idk if it’s the fact they’re too big, or the combo of that and upping the stiffness (6 to 10 flex) but my shins were absolutely obliterated from like 2 hours of skiing. legit worse than when I was in high school and had shitty rossignol ski swap boots.
All that being said, you should probably just hit up the fitter. I’m hitting one up this weekend I’ll let you know how it goes.

For the record, your toes are supposed to touch the front of your boots when they’re new. When you’re standing up straight your toes should be touching, and when you flex the boots they should move back away from the front. The liner packs out so you gain room once it’s broken in. If your toes aren’t touching the front at all when you’re trying boots on, you’ll have too much room after it’s been broken in.
