Replying to Ski size questions

I'm a shitty fat east (ice) coast skier that likes to jib and screw around the mountain. Currently on some 178cm Blends true center mounted for park (feel as if they are a bit short). I'm 5'11" and 200lbs and debating grabbing some Candide 3.0s at 190cm. I like wider skis, and would consider myself expert when it comes to downhill. is 190cm going to be too tall for something to just screw around larger vermont mountains? also, is true center mounting these stupid?
