i’ve never spray painted skis but i have spray painted and if you want the paint to actually stick them you gotta use primer not just straight to the paint
I have a friend who spray painted his kartel 108s jet black and it looks fine. In my memory he just spray painted straight onto the skis with no sanding or primer or anything. maybe just some masking tape for the edges.
I did it once when I was young, I sanded the top sheets a little bit, sprayed and then covered it with a clear coat paint sealer that worked surprisingly well in the snow

I painted some skis a couple years back and it was super fun. Id just say sand a bunch, prime, and coat 3-5 times very lightly. Also if you can get a paint-on clear coat/protective layer opposed to a spray-on that might help with durability too. tThe more time you put into it the better/longer lasting results you'll get, just know it wont last like a top sheet graphic. But I think the wear is also a cool look.

I had pretty stuff skis but from what I remember it didn’t crack much from it. The paint seemed to flex a little and the sealer coat kind of locked everything in place
Just accept that spray painted skis are going to look like....spray painted skis. All the sanding and primer in the world is going to still make them look like, you guessed it, spray painted skis.
If that's what you're going for I wouldn't overthink it and just blast away. Maybe tape the sidewalls and edges off and have fun. The general rule of having spray paint not look like total crap is to pull your hand away from what you're painted a bit and to paint a little, let it dry, then paint a little more. It's a layering game unless you want dripping.
Also...they're going to get scratched. First day. Probably first run.
