Is it just me or does anyone else order soup purely for the broth? I mean its both refreshing, filling, and doesn't require chewing. Plus you're actually saving people work if you don't use your spoon and just drink from the bowl itself (using your teeth as a sieve to filter out unwanted chunks). Idk maybe soups have become a way for restaurants to profit off of ingredients that would otherwise go bad.
"Oh yeah that chicken that's gonna expire tomorrow, yeah throw that in the soup of the day."
"What should we list it on the menu as?"
"Idk... call it something fancy...like uhhhh...sopa de pollo!"
Whether you agree or disagree, know that soup would be little more than a shitty salad if it didn't have broth.
