Binding "lift"

I know some bindings are two piece and some have a plate and some binding have some lift to them. But how does lift effect skiing.

plates/lifters enable quicker edge to edge transfer. it's ideal for people like racers and some enjoy having lifters on fatter sticks so they are easier to maneuver, but you will find that most people on this site generally prefer to be flat on the ski for park and freeriding

^well put. also it eliminates booting out. if you're arcing a really low turn and your boot hits the snow = death.
