60fps on 144hz in theory looks fine, but after you play at a higher frame rate, it feels choppy.

144hz and 240hz monitors make a huge difference for gaming. When it comes down to raw numbers, you are correct about the ability of the human eye to see a certain amount of frames, what you're missing here is that when you have 144fps (or higher) objects appear on your screen earlier than at 60fps. This isn't about how many frames you can see but rather the image on the screen, at 144fps the enemy will appear on the screen earlier in real time than it does on 60fps because the amount of frames "smooths" out the motion of the object, making it easier to see faster, especially if you're playing a fast paced, online FPS game.
Anyone who gets a 144hz + monitor will tell you its better, it might not make sense on paper, but it's very real. So with your question at the end is it necessary? If you want the full gaming experience using a 144hz monitor (or higher) is necessary, but you can definitely play games at 60hz, you're just missing out on the best experience.
