i feel like when i detune the edges in the binding area i lose a little performance when carving or on jumps, so i only detune when i know im going to be hitting rails.

Before you de-tune a set, try the "Long" base bevel method.
If it doesn't work for you, you may not have made the bevel long enough.
Anyway, you can always destroy the edges later if you don't like it.
After a lot of rail hits, the underfoot area will become ruined no matter what you do, but my method will make the edge hold out a bit longer in most cases.
Also, a ski with a long base bevel will glide a bit faster too, all other factors being equal.
