in two weeks I go back to working my corporate job and I can’t be that person that brings pb&j’s every day so I’m looking for any recommendations for packed lunch
also I find cold meat repulsive so cold cuts are a no go

To me using communal microwaves is fucking nasty because it smells like other peoples nasty ass shit all I'd think about is what the fat bitch before me heated up and how I could taste it on my food. Its not your home one you'd use to heat up hot water for tea when your too lazy to boil a kettle. If your gross enough to eat hungryman TV dinners then who cares.

byuboundI season and cook a pork tenderloin pretty frequently now. Lasts me a few meals in burritos or in sandwiches with jam, spicy mayo, and arugula. Pretty hype
koolkaleYou should check out some tougher cuts if you are going for leftovers. The more a muscle works, the tougher it becomes, but the more flavorful it becomes. Tenderloin has a good texture, but not much flavor because it does very little in the pig. If you take a tougher cut, and cook it longer (Carnitas would be a great recipe for your applicaiton), you will break down the connective tissue in the touch cut and make it softer. Since it is a more flavorful cut of meat, leftovers will have more flavor several days in.

koolkaleTo add on to this. If you feel like doing a small amount of meal prep, season your tenderloin a day before you use it with salt. Then leave it uncovered in your fridge. Salt triggers both osmosis and diffusion, but one takes longer than the other. So for the first couple of hours, the salt will draw out the moisture from your cut, but after that, the salt will start to diffuse through the meat and season it internally. The water will get drawn back in.
Salt, not only seasons the meat but also gelatinizes the proteins in the meat to retain more water and give it a better texture. Also, the spice you use with your salt will mix with the surface moisture and also get pulled through the meat. You want to leave it uncovered because fridges are super dry, and it will help the meat develop a better crust. If you are worried about leaving raw meat in your fridge uncovered, the salt and dryness have anti-microbial properties that allow you to leave meat uncovered (but salted) for days on end.
