Metal Bar on Jester Pro?

Out of Curiosity what does the metal bar on the top of the toe piece do?

Idk but I got them mounted on some skis and they actually work pretty well for getting snow off if you're too lazy to use your pole or something. No idea if it actually provides structural rigidity.

not 100% on this but since it looks like it goes down into the joints where the toe wings connect to the rest of the toepiece i'd say it probably just adds tension and durability to that part of the binding and helps it cope with the amount of force that would be expected in a binding that goes up to 18 din. Could be totally wrong though, maybe it's just supposed to look cool

The cross bar on top of the toe piece of the binding links the wings of the binding, providing unprecedented torsional rigidity as well as an increase in lateral power transfer. The classic Jester would develop slop in the wings on the toe piece after 50-60 days of use, but the introduction of the cross bar has solved this problem. It also doubles as a convenient scraper when your boot bottom becomes overloaded with snow!
