If I'm looking for a pair of skis to go fast on hard packed snow, is it heavier the better or lighter the better. For example the Volkl racetiger SC or the racetiger carbon SC

With performance piste skis, there will be a point where too light is not good, just has too heavy is sluggish. I don't recall the weight being that drastically different between those two that you mentioned...
Our Redster G9 is over a kg lighter than our previous Double Deck GS, but it's still one of the heaviest skis in the Atomic catalog. Basically, as long as you are in the sweet spot of a weight range (in the appropriate category of ski of course), it will be fun ski on hard snow.

What kind of turns will you be making? Short slalom or long sweeping giant kind?

Ye if you take long turns and get some big heavy skis and slap some fks 180's in them you won't be able to slow down.
