Best bet at the moment is to go Mt Hutt (which has got an ok base at the moment, and is due to get 30cm+ over the next few days) or Queenstown (Cardrona and Remarkables are both open and ok at the moment). Cardrona has a sick park but I prefer Remarkables for whatever reason. Im from AUS, but have been over to Queenstown twice over the past few years (and heading over at the end of July). But yeah party scene in Queenstown is good, can't really say too much about Mt Hutt and around there tho.
Looks like it is going to be a late start to the season.
