TSBI'm 6'3" 195 so were close to the same size. I had a chance to ski most of this years bigger skis at a demo event last spring. Check out the Nordica Enforcer, they make it in a 193. I think that would be a great ski for your height and weight assuming your a type 3 or 3+ skier. As far as the Elans go I would stay away from the Amphibious, however if you like elan check out the ripstick 96, new ski for them this year and its bad ass. However they the biggest they make it in is a 188. Good luck picking skis. The ripstick was my favorite I tested at the event.
Enforcers might be a tad soft dont you think? somebody who is 6'5 and 195 and very aggressive might not enjoy them that much.
I'd reccomend the stiffer Blizzard Brahama, or the wider (98mm) Blizzard bonafide. both are have 2 layers of ti and carbon tip and tails, they are pretty burly, and enjoy being skied hard and fast. they come in a 187 which might be on the shorter side for you but will mean they'll handle better in bumps compared to a 193. my only reservation would be that they wont do short turns aswell as others which might be a deal breaker for level 2.
in which case you might be better looking at a more piste oriented "all mountain" ski.
