Definitely for photos and aiming to stay under $1000

I have any a7s and absolutely love it. A friend has an a7 and it is an awesome camera all around. Great features such as zebra and focus peaking, electronic viewfinder, 24mp resolution, and good high iso performance. One of the best out there for the price. I think the a7 is a better choice than the a7r/a7rii because only a few people need the 36+ mp count and the a7 is so much more affordable. Idk how much you care about video, but I used the a7 as a B cam on a shoot and it held up very well against my a7s.

As for lenses, I think using the metabones with canon might slow down autofocus a bit but not sure. However unless super fast autofocus is something you absolutely need, I would stay with canon since there are just so many more lens options available. Also the sony kit 28-70 FE lens is extremely sharp for the price.

If you are focused mainly on photography also recommend checking out the Sony a6000. It has an aps-c sensor rather than full frame but is an outstanding photography camera with extremely fast autofocus and burst shooting for half the price of the a7. My brother has an a6000 and I have been using it a lot w/ my telephoto lenses for the extra mp count and reach for wildlife photography. Here is a cool course about the a6000 by a professional photographer which shows how good it is.

I have been looking at the A7 or a canon 6d both are the lowest priced full frame offerings on the market but I like the compact size of the A but i'm bot totally sold yet on either.
