This year, while out there I did my second trip with them, last year I did my first. I loved it. They won't take you on crazy shit, unless they ask and you say yes. They will always ask what you want to do. I would say if you can ski all/ most of at least the single blacks at whistler you are in perfect shape. If you can only rip the blues let them know that'd you'd rather ski some deep pow rippers not steeps and deeps. They will accommodate you since you are paying them, and since the guides at extremely Canadian are super friendly. Be prepared to be exhausted since skinning is hard. Go for it, you'll be good enough for everything (they haven't taken me on anything that I've said "shit, I'm not making it down this with clean pants), also I've skied my deepest powder ever while with them last year (almost always group tours btw sometimes you'll luck out and it will be solo but they always try to avoid that).
