A grilled cheese consists of only these following items. Cheese. Bread with spread (usually butter). This entire thread consist of "melts". Almost every "grilled cheese" sandwich i see on here has other items added to it. The fact that this thread is called "best grilled cheese" is nothing short of utter blasphemy. Let me start out by saying I have nothing against melts, I just hate their association with sandwiches that are not grilled cheeses. Adding cheese to your tuna sandwich? It's called a Tuna melt. Totally different. Want to add bacon and some pretentious bread crumbs with spinach? I don't know what the hell you'd call that but it's not a grilled cheese. I would be more than willing to wager I've eaten more grilled cheeses in my 21 years than any of you had in your entire lives. I have one almost everyday and sometimes more than just one sandwich. Want to personalize your grilled cheese? Use a mix of different cheeses or use sourdough or french bread. But if you want to add some pulled pork and take a picture of it, make your own thread entitled "melts" because that is not a fucking grilled cheese. I'm not a religious man nor am I anything close to a culinary expert. But as a bland white mid-western male I am honestly the most passionate person when it comes to grilled cheese and mac & cheese. All of you foodies stay the hell away from our grilled cheeses and stop associating your sandwich melts with them. Yet again, it is utter blasphemy and it rocks me to the core of my pale being.

You god damn heretics. Respect the grilled cheese and stop changing it into whatever you like and love it for it what it is. Or make your damn melt sandwich and call it for what it is. A melt.

Reminds me of the episode of fantasy factory I think that's what it's called where they bought the most expensive cheese they could ando entered a competition.
I use the big wedges of gouda that costco sells.

use mayo instead of butter on the bread, and then i usually do one of two things:

1. pepper jack. lots of it. that is all.
2. if you've ever had a chicken quesadilla from taco bell, you know its dank as hell. i googled how to mimic the sauce and its hella easy (its like mayo and spices) and if i have any chicken i'll use that with some sharp cheddar... omg. wow. holy fuck. mouth orgasm.

side note: sourdough always, shit is bomb

My favourite "melt" combo is spread minced/pureed garlic on the inside of each slice, butter both sides of the bread. Then stack some bacon, kielbasa, and ham inbetween two slices of aged cheddar. Sometimes throw in a few other cheeses to spice it up, but the garlic is a key to success.

Simple buttered white bread with Kraft singles and a side of chicken ramen noodles is a classic. Sourdough with velveeta is a nice upgrade.

For real cheeses though I like pepper jack and Colby jack, sometimes provolone. Always a little bit of fresh Parmesan if I have it. Sometimes I just mix all the cheeses I have. Sourdough or Texas toast if I want a white bread, simple wheat or maybe the kind with seeds or daves killer bread if I want something a little healthier. Shredded cheese baked into the outside if I feel like it. Always gotta butter the outside of the bread, never use cooking spray, maybe some garlic powder if I'm feeling like that.

At my schools dining hall at the sandwich bar they have a panini press, which can make some decent grilled cheeses if they wouldn't fuck it up every time. Grilled cheese needs to have nice fluffy toast, which can be made with a panini press if it isn't super heavy. But every goddamn time I try to get a grilled cheese they fucking smash my sandwich to death, sometimes putting all of their body weight into the lid of the press. And then when they open the press and they find that all of the cheese has melted out and the bread is completely flattened they are somehow surprised by the mess they have made every time. It's so fucking frustrating, I just want a damn grilled cheese, not a puck of smashed bread

went to a party last summer and the guys older brother owned a grilled cheese foodtruck when the party got shut down i went outside and bought one and it was probaly the greatest thing that i've ever eaten (bacon, whole wheat bread, several kinds of cheese)
