Replying to Time lapse photography

So tomorrow I leave on my trip to New Zealand for Christmas break and I am wanting to try some time lapse stuff while I am there. My remote just came yesterday, and I'm wondering what I should be setting it to in order to take shots of the stars moving across the sky. Any information about time lapse/remotes would be great.

BTW I'm not sure if this really matters but I'm shooting with a Canon Rebel T3i and I have a Neewer remote.
