115 mm brakes on 99mm ski?

Personally I'd get the 90mm and tweak it out a little to fit. Better to have snug brakes than floppy ones that get caught up in stuff.

Most ski techs will say only get breaks which are max 15mm out. So I say get FKS 14 in a 95mm

as a tech, i know that pulling the brakes on the fks make them kinda wonky, and ill only pull for about ~5mm. id say go with a different binding TBH.

The 115's will be fine. Look brakes and most brakes now are made to retract to rest on the top of the ski, making it go to about 90.

This happens if you try to bend them without securing the horizontal portion of the brake arm, it just bends the arrangement under the pedal and in the base plate as it's just shitty pressed steel.

If you grab the arm after the 90 degree bend with some vicegrips and hold it really secure while you bend the arm with a snapped ski pole or similar you can achieve a pretty huge bend without making the brake all floppy - I used 115mm brakes (the larger ones didn't exist yet) on my 132mm Hellbents, no issues.

Ideal method is to completely disassemble and bend them in a vice but that's not always practical.

mitchskiIm looking at the Look Pivot 14 to mount on my Al Dente's which are 99 mm. but look only have 90, 115 etc brake options...will it be alright?

To answer your question yes you probably could. (My Dad uses an pair of my old marker brakes that were bent out to ~120mm on 96mm waisted ski. He was too lazy to bend them to fit and just threw them on his skis, amazingly enough there didn't appear to be any drag.) But would a shop tech recommend it? No. And is it the best option available to you? Again, no. As mentioned above picking up the 90mm is your best bet, they require very little bending to fit.
