depends on the ski, depends on how you ski and how you like to ski.
If you're into powder skiing in a more freeski kinda way (like Pollard) then maybe 2-3 back from centre would be normal.
If you're into charging huge lines and aren't going to be playing around then maybe closer to 5-8 back from centre. Most big mountain charging skis probably have a recommended mounting point around there.
don't quote me on any of this though, I've never worked in a ski shop and mount mine where I have the most fun all mountain (2 back). Personal preference really.

What kind of skis do you have? I have a pair of line blends and i have them mounted -3 cm from center, and im skiing 65% park, 35% pow. They have been working nicely for 3 years now. I am happy with the mount.

Depends how you ski and what you like, me personally have been skiing my everyday skis center mounted since I was about 12. Skiing something else in the park or on the groomers just feels weird to me. My powder skis are mounted 2.5 back. They feel super good there for me, not too much front and just enough back. So if you have a one ski quiver you have to figure out if you wanna go for what you are comfortable with or whats going to be the most versatile and offer the best out of the ski for you.
