Replying to Mounting center vs. conventional

I picked up a pair of 2015 Blizzard Regulators the other day which seem to be a nice, fun ski that can actually hold an edge. The last pair of skis I had were '08 Atomic Twins (an all-mountain twin tip) and I really loved how these felt so I wanted to get another all-mountain twin.
I love the way I can ski on center mounted skis but I am not sure how the Blizzards are built. The recommended mounting position is 7 cm behind true center. Does Blizzard build the ski around the intention of mounting it traditionally or can I get away with a center mount?
