You can actually check on their website, and select your store. There are sections for open box and refurbished. It tells you what is in stock. Occasionally they will have additional models in stock, but it is usually very accurate. They also usually have really good deals on the new intel processors, like $50 under retail for the i5/i7. In store only, but that doesn't sound like it will be an issue.
Also check out pcpartpicker.com, it can help you keep track of everything, and has options like choosing in store. Toms hardware has good reviews and very helpful hierarchy charts. They let you compare older stuff to the new models so you can find deals in terms of price/performance. Tonymac is good if you want to do hackintosh, and for that and more video related concerns (cuda/performance), many guys on here know quite a bit.
