Would buying skis in the 180s be too long for me? Looking at skis like the AR7s and punx so not a lot of rocker. I'm 5'9 ish and a good jibber but I want to get better on jumps.

Personally I wouldn't go much higher than 180 if I were you. I'm 5'10" and I ride 181s, which is plenty stable for jumps and even a little big for jibbing in my opinion.

probably fine for park, im 5 10, 190 and my daily driver is a 193, im not a park skier though

It's all preference. I'm 510 and 155lbs. I ski 183 in park, and 192 in pow/trees. I prefer putting in the extra work in on the 192's for the extra stability/speed I get out of them.
