This is my family recipe for the best pie crust ever. So flaky and simple, doesn't have that rubbery taste of store bought shit. All these measurements are not exacts, I find that at different elevations I have to tinker with the amount of flour needed. The dough shouldn't be slimy once its mixed.
2 c flour
1/2 c sugar
1/2 c unsalted butter
1/2 c canola oil (if you want you can do all oil, I find the addition of butter helps with the texture)
1/4 c water
that's it. mix them together until the flour is blended it, don't over mix if you're doing more of a fully covered pie top. if you mix it a little more it becomes more elastic and less flaky but I find that helps for doing lattice tops. Split the dough in half, use half to cover the bottom and sides of the pie plate, the rest goes on the top. My dad (excellent baker as far as taste goes, but his food isn't very pretty) is a huge fan of just doing a collage of dough blobs on the top, leaving some room in between. Looks like shit, tastes amazing.
Fill with dis shit :
6 large granny smith, or other tart pie apple, peeled and cubed
1 c sugar
1 tsp cinnamon
2 or 3 tbsp corn starch
mix it all together. voila. perfect apple filling. Stick it in the oven at 450 for 10 min then turn it down to 350 for the next 45-60 min. check on it periodically towards the end, once the edges of the crust start to turn brown you know its done. Best served with vanilla ice cream. Mmmmmm
I find that simplicity in baking leads to better results. Not a fan of over seasoning and all that shit. This is hands down my favorite pie because its easy and tastes so good without all the extra crap.
