Rental bindings

I've got a Jester rental binding, as in mounted on those adjustable plates.

Can you convert this into just a normally mounted binding?

No, but there's no need. Jesters are the rental binding most similar to a normal binding - it's just a longer heel track plus a track for the toe and very slightly higher stack. Plus you can change your stance around like with the Schizo; just adjust the toe then heel.

I was just worried that it would be more prone to breaking apart.

Just have your shop check em at the end if the season if you're worried, they can check release values and adjust.
