Patrol runs sweeps at the end of every day to make sure everyone is off the mountain to enable the groomers, etc to start their shift for the night- if you were to get hurt after closing the resort could still be liable depending on state law, which is obviously something they don't want.
At least in Utah some the resorts are cool with letting people hike pre-season or even during normal operational hours, but that's about it.
