op, here is what you need to do:
• douse the squirrels in a bucket of water, or spray with a hose, until the fur is soaking wet, this helps removal
• after wetting them, pluck the hair starting from the base of the tail
• make a cut through the base of the tail bone, but not through the hide on top of the rump, without removing the tail
• place the back legs on a board, place your foot on the squirrel's hind feet & cut towards head about one inch
• make a cut in front of each hind leg & pull up on the tail; peel the hide towards head until both front legs are exposed

• swap ends with the squirrel (avoid touching the flesh), stand on the tail, and remove hide from back legs
• pull the front legs through, cut front feet off, then hind feet & head
• carefully remove the entrails (this gets bloody, don't worry about mess though), then wash the body cavity
• you now have a clean and ready to cook squirrel
• if i were you, i would roast the squirrel in a pan with some vegetables, basting it every 10-20 minutes
• you could also cook it & remove from the bone, then make squirrel pie or stew
• you could slice up the meat, fry it in a pan, and serve with fries
