Ya, -30 C is probably the cutoff for me too. That's without the windchill though. Sad thing is, temperatures like this aren't uncommon on the prairies.
I was skiing a couple of weeks ago at Granite Peak, WI. It was 0° at night with like 40mph wind gusts. My facemask was frozen to my face and we watched an umbrella get blown off a table and almost slam into a group of people. That's when we decided it was time to leave. That's the only time I've stopped skiing from coldness.
It really depends on the wind and humidity as well. I have had days where -12C felt colder than -20. But yeah, after a certain point the skiing is just not enjoyable. I'd say -25 to -30 depending on different factors.

Cold at least you just keep moving and layer up and you'll be fine. Windchill is just brutal. No practical amount of layers will help in that type of cold.
