Well in terms of proffesionals. I think that most tall athletes (i mean genetic athletes, not wannabes) stray away from skiing.
most tall skiers you see arent the most athletic tall people if you really think about it. take a nba point guard and rearrange his past dedicating it to skiing. like steve nash growing up in bc, but huckin gnar instead of passin' magic...hed be doing crazy acrobatic shit.
if skill is absolutely equivalent, taller athletic skiers can ski faster, handle bigger stomps. That comes with a drawback of harder falls, and worse injuries.
i think Shorter skiers make better pros because overall they're more acrobatic...like i said.most of the genetic athletes that are tall dont even consider skiing as a sport. its unfortunate.
