i am building a pair of skis and have everything planned out except for one thing, where do i put the waist. what i am asking is how far back should i put the waist from the tip? Length of skis are to be 180cm and dimensions of 130-100-120.

It all about parabola. How’s you math?
Define your contact points.
Fit a parabola to nose and tail contact points.
The point where the parabolic curves are closest is the location of the waist. This will be more than halfway from the nose contact point as your tail is narrower.
Then, adjust the parabola until the narrowest point = 100 mm :-)
You probably want to do this in a graphics program, enlarge to scale, and print out to cut a template.
Bear in mind that many companies these days combine multiple parabola to form a complex curve. I can’t help you with that. If you have any mates studying engineering, ask them for help.
