I mounted one ski backwards on my old Stepups. They had actually been mounted once forward before. No fucks were given.

Depends on the ski, just because a ski has a symmetrical shape doesn't mean the flex is

Ding ding ding, correct answer.
If you took some calipers and checked the thickness of the ski through the length that would probably give you a pretty good idea.
But for the most part, I think the majority of symmetrical cut skis have symmetrical flex.

i was going to mount one of my walls backwards, but contacted volkl and they said the tails were slightly stiffer.

Not all symmetrical skis with sidecut have a symmetrical flex, so it could make the ski ride strange if you mount it up backwards.

What Balto said. Also what skis? It depends what the flex is and would help if we know the skis.
