Only mount true centre if it's a symmetrical ski. Dead centre is pretty stupid. I usually go -2 from true. What skis do you have? Skiing ability? Where do you ski? How tall are you? Length of skis?
How do you ride because it varies, are you going to ride like backcountry kickers and landing switch or are you just riding down. I would just center-mount them.
Just because a pro rides their ski a certain way means nothing. Let's be honest, how often are you going to ride switch in pow? I mounted my jj's at recommended and the tip still seams like it want to dive all of the time, for te way I ski which is a real aggressive stance, I prefer a more traditional mount so I can really load my tips.
Now lets be real, it all depends on the riders skill level and what they do in powder, I was saying my opinion to try to help someone out. Everyone rides different!
