I follow more of the "primal" diet than paleo. I could never go 100% since i work at an italian restaurant and i cant exactly tell my chef that i have to stop eating pasta. I see nothing wrong with dairy products especially when raw, i do limit my lactose intake though. I mainly just consume butter, ghee, heavy cream, whey protein, and cheese.
I also still eat quite a few carbs through out the day. Sweet potatoes are my biggest source, i also eat a lot of bananas and plantains. White potatoes do have toxins in them that makes some people say that theyre not paleo, but i still eat them in moderation. I also eat white rice from time to time as it is the most innocuous grain since it has its bran removed which contains the saponins and phytic acid.
really the biggest part of eating paleo for me is the meat side of things. I have been getting very into raw meat, organ meat and fish. Ive been making tartare, carpaccio, ceviche, and sushi quite a bit. Bone marrow and gelatin are other new favourite foods of mine. Osso bucco and lamb shanks are sooo fucking delicious, and theyre super good for you too.
Then theres the whole fat side of things, now i always seem to have the most ridiculous collection of fats at home which could range from, olive oil, coconut oil, macadamia nut oil, avocado oil, butter/ghee, lard/bacon fat, tallow, and duck fat. I can buy duck fat in bulk at wholesale prices though my work, so im going to start doing a lot of deep frying with that as its fucking delicious, but i can also render lard and tallow for even cheaper so those will be used as well. Haha its not to often that you think of deep frying for health reasons.
