.Made this a couple of days ago:
Ingredients:
Pasta (whole wheat is actually better) - Roma tomato - Mushrooms - Black olives - Red onion - Basil - Garlic Clove - chicken breast - Rocket (not pictured) - Aceto syrup (not pictured)
Instructions:
Put some water on, 1l with 10g of salt per 100g of pasta. Put the pasta in the water as it boils and boil it so it has a good 'bite'.
Put the basil with the garlic clove (minced) and a few olives in a mortar.
Mortar it to a puree and add 2 tablespoons olive oil.
Then cut the chicken, tomatoes, the onion, mushrooms and some chopped olives. Fry the chicken (just) cooked.
Drain the pasta when al dente and add to the mortared puree, stir well. Then add the chicken, tomatoes, olives, red onion and mushrooms and stir well again.
Lastly, add the arugula and stir again. The rocket should only be added if the pasta has cooled. If the rocket is added to early to the hot pasta it will cook and result in an unpleasant bitter taste.
Scoop up up in a nice bowl and finish with salt and pepper to taste and add some aceto syrup.
There are many variations possible with Parma, salmon or steak instead of chicken. You can also add pine nuts or cashews, Parmesan and (semi) dried tomatoes.
