I made some super tasty dinner so I figured I'd share:
jamaican jerk chicken + veggies and rice. enough for 2-3ish hungry people.
get some jamaican jerk marinade at the store (if I had the time/money I'd invest in doing it homemade, but I'm not doing that right now). get some chicken thighs, rice, and whatever veggies you like, too.
throw half that bottle into a tupperware with 4 or however many chicken thighs come in the package you get. cover with water and leave covered in the fridge for a couple hours or overnight for extra tasty.
when you wanna cook it, throw the whole shebang in a big sauce pan, bring it to a boil and then leave it at medium/low for a while, covered the whole time (crockpot style eh).
after the chicken's white on the outside, add some veggies (or don't, you paleo fool). I did brocolli, onion, and brussels sprouts cause i had em lying around. cook for however much longer you want (at least til the veggies are soft and the chicken easily pulls apart with two forks, ala pulled pork). let the sauce thicken up a bit.
get a bowl and put some cooked rice in the bottom and drown it in all that tasty sauce/chicken/veggies! you can shred the chicken if you want, but I didn't. can also be done in a crock pot.
I didn't take pictures but if you've never had jamaican jerk anything, do yourself a favor and stop depriving yourself.
