why is cast iron cooking so special other than to combine lifting and cooking?

It is best if you don't clean an iron skillet much. Scrub minimally and rinse after use. A good skillet has flavor. Also it's nice for searing meat.

this was breakfast this morning. steak sandwich with blue cheese dressing cheddar lettuce bbq sauce etc. on this nice rosemary bread. leftover mushrooms from the night before
curly fries are slightly burnt because i used convect @ 500 cause i was in a hurry

Steak pasta with a "sauce" made from red onion, cherry tomatoes, garlic and cheese. And olive oil of course. Not sure what it'd be called in italian. Absolutely delicious though.

"Here are some benefits to cooking with cast iron that you may not be aware of:

Cast iron is actually a way to go green. You can actually save energy because it takes less heat to cook than other pots or pans.

It is known to be a dietary source of iron especially when you are cooking with high acid foods like tomatoes. However, if you are taking a high dosage of iron supplements check with your doctor to see if there is any concern so you are not overdosing with iron.

If you fry or saute your foods or love to bake foods like corn bread, there is nothing better than cast iron to get the best crust on your food. Once you get use to this type of cooking, you would not want any other pan. Cast iron is extremely durable and can be put into the oven from the stove. You do want to preheat it before frying or sautéing. Then to check if it is ready to use, drip a few drops of water to see if it bounces off. That's the best way besides touching it. Now, speaking about touching it, do be careful when touching the handle because the whole pan will get hot and you can get a nasty burn if you forget.

Cast iron cookery will give you the biggest bang for your buck. It is the least expensive cookware that will give you the best even cooking out there. And if you don't like to cook, well it makes a great weapon."

yeeeppp just about to pick up a landscaping job for the summer so i can afford to cook through out the year. we dont get any tips in the kitchen yet the servers can come out with several hundred in their pocket from one table....haha i shouldnt need a second job just so i can work another job

paired five course meal i planned, cooked and prepared last weekend that i was super stoked on. everything went great for an on-site cooking adventure. haha

i know that feel. haha this last saturday we were serving 740 people over 4 different events.....there 7 people cooking in the kitchen and at 3 o clock (hottest part of the day; naturally) we had another 20 serving staff show up to begin loading plates, table settings, serving platters, ect. the internal kitchen temperature was 96.4 when i walked out with my food at 5:15.

1st-Chilled English pea soup with mint infused creme fresche.

2nd-my take on patatas bravas. roasted new potatoes, bravas sauce, spanish chirizo, on a bed of sautéed arugala.

3rd-shredded goat meat tacos wrapped in my homemade corn tortillas, a salsa made out of braised beets, fresh zucchini and shallot glazed with this bombass dankass guava reduction.

4th-beef tenderloin seasoned with garlic, thyme, rosemary and parsley on a bed of roasted kale, butter-braised veg, neapolitan made from grilled heirloom tomatoes, zucchini, eggplant, and fresh basil served in a light bath of bordelaise sauce that i spent hours crafting. (all veg was also out of our kitchens garden. :])

This thread inspired me to make real food so here goes
1 whole left over baked potato cut up

Whole small onion cut up

a little sliced cooked grassfed beef from my farm

a tiny bit of pepperjack

splash of expensive vinegar

SHitton of good spices

sauteed in good olive oil



Wish I could figure out how to add images

It was really good, kind of reminded me of those traditional jewish potato pancakes that start with an L.

Last night I made peanut butter choc chip banana bread. It was ok. Not the best & I learned a few don'ts. I'll never be a baker. Always a cook. But at least it was edible :)

It contains oranges, strawberries, cherries, citrons, and apple.

I don't know the exact ratio since my roommate makes this, I suspect it's a complete rip-off of some Coolbest flavour do.

Whilst I'm not accustomed to gentleman roommates it could be nice for a change, also there's just one bed, but I suspect that that won't be a problem.

Shitty picture, but I made a veggie lasagna last night - contains the ricotta/mozz mix w/ spinach and herbs. Then zucchini, mushrooms and onions. So good. Leftovers for lunch today.

Tonight, marinated london broil with olive oil, garlic, pepper and lemon topped with a light mushroom gravy. Asparagus with garlic, oil & lime.
