Taos pretty much hands down. The park is okay (still one of the bigger ones in New Mexico) but the terrain outside it is pretty sick. Its steep and has some pretty sick lines. You also get the most powder here out of all the New Mexico ski resorts. There's a bunch of hike to terrain that can keep you occupied for a while.
I've never skied out west before, but i can handle myself on skis just fine i think, and i usually just stick to park. I'd say I'm about an intermediate level skier (for midwest), will i be able to handle myself in the pow/bigger mountain stuff?
yeah, for sure. As long as you're not riding a park ski it shouldn't be bad. It might take a bit to adapt, but just try it and you can get the hang of it pretty quickly. You definitely want to hike up to the ridges of Taos if you can. Kachina peak is a sick descent, and its not too steep.
