No, you beat skyrim when your level is 100 and you have everything possible to obtain in the game, and every possible quest completed. So, no you did not 'beat' skyrim. Skyrim beat you.

except you can't complete "every possible quest" because Bethesda built in an engine that once you've completed every pre-programmed quest, it will start making up random quests (misc. quests) for you to do

Elder Scrolls games aren't about finishing the game as fast as possible. It's much more enjoyable if you take your time, learn new skills, just explore the world in general.

if you get everything to 100, you end up at level 81. That being said you can reset your skills on pc by modding so there really isnt a level cap
