I learned about this in my Canadian Studies class, it's actually an elegantly simple explanation. In those times, it was fashionable to be pasty white, because it distinguished you from the poor people who had to labor out in the sun.

As the industrial revolution gradually unfolded, lower class labor transitioned from working the fields to sweltering in the factories, where they got almost no sunlight. As such, the workers began to pale. Since it was the wealthy upper class that could afford themselves leisure time outdoors, they began to take on the darker shade that the workers once had.

Hence the transition from pasty to bronze as the desired pallor
