There are a ton of ways for subject isolation, bokeh is just one, and it often works really effectively. This conversation wasn't really about thinking whether or not bokeh is effective to isolate the subject, it was about how shooting wide open can a lot of the time be a great option for increased subject isolation regardless of the loss of subject sharpness. Portrait lenses open up huge to let a lot of light in, but also to isolate the subject.
And walking isn't the same thing as zooming because your perspective changes. Sometimes that's desirable, sometimes not. It depends on the goal of the photographer. I'm guessing that people in hollywood use a dolly when the perspective change is desirable.
