Take the grip off and you cut them. If you are having a hard time taking the grip, just boil it for a couple of minutes and it should come out easily.

just did this last night. Take the grip off (should be pretty easy to figure out, there will be a screw of some sort), and cut them with a hacksaw. It's done exactly how you'd think, and it's really easy.

^ And it's best to take a file/sand paper and round off the edge where you cut, get rid of any splinters.

i dont mean to hate, but i think a monkey can figure out how to cut a pole down. and there are hundreds of threads and videos all over the internet on how to do so.
but in case you are less intelligent than a monkey..
-boil water
-place grip in boiling water to soften its hold
-remove grip (pliers or vices work wonders)
-hack saw/pipe cutter to preferred height
-jam grip back on
-ski with tiny poles

1. boil water
2. let water cool to the point at which you can touch it without hurting yourself
3. soak the grips for a few minutes
4. pull off the grips (the hot water will loosen them but you'll probably have to muscle them off)
5. take a hacksaw to the poles where you want them to be cut off
6. push the grips back on (they will go on a lot easier than they will come off)
there you go

Another pole question:
I cut mine down and am putting different grips on them, but the insert for the grip is much wider than my poles. What should i fill the gap with? I've heard using hockey tape then applying a decent amount of epoxy works. What do people usually use?
