My FKS did this on 1 pair of skis when I first got them. Solution was to crank the forward pressure up another few notches. They still come off completely fine and the tab is a little bit behind the notches. Massive disclaimer, if you do this and your leg snaps and you die, not my fault. But if you're riding FKS180's you should be OK with this.
Google FKS forward pressure, theres tons of stuff on the net about it, mostly comes down to the phase of the moon and the direction the wind is blowing when they are adjusted (or more likely it's to do with different thicknesses/wear on the heel/toe lugs).
You'll know if you've gone too tight because when you clip the boot in the toe will pivot forward slightly. It takes a bit of time with a screwdriver but you should be able to sort it.
For what it's worth, I skied for a couple of days with that little bit of play in mine, no issues, they never fell off or anything. Just wait until you have a big gnarly almost-crash and you'll see how far they will travel before they let you go.
They sent you the wrong binding and you ended up with FKS?!?! Well, I guess worse things could happen, it's probably one of the burliest bindings you can get. But if you only started skiing 2 years ago, unless you're skiing like a man possessed, they're probably massive overkill.
As for adjusting them... a fair few newish ski techs have likely never worked on a pair, seeing as they were off the market for many years. So they may well be slightly out.
I'm not really sure what to say... obviously your shop hasn't got them quite right, adjusting them yourself is a slightly dodgy proposition if you don't know what you're doing but at the same time they're 180s, they're dangerous to your health in their own right if you don't know what you're doing.
I dunno... I run my 18's at 11 or 12, I'm around 190lbs and ride fairly hard and have broken 3 pairs of Jesters, got fed up with their plastic BS so now I ride FKS. I feel like I justify it, having wrecked those Markers...
What you did is adjust the forwards pressure. Which is what like 5 people in the thread (including myself) suggested you do.
Just be aware that if you adjusted it too far, it will amplify the force required to get out of the binding or may make it not release at all under some circumstances.
Make sure those arms are exactly even as well.
