Would gloves (like thin liner gloves for dexterity) under mits defeat the purpose of mits? I hate taking my hands out of my mits to look access my phone or clear my bindings because my fingers get so cold. But I don't know if it would compromise the warmth of my mits.

I do that. I have warm wool gloves that I wear under a mitten shell. So its basically like wearing mits but it I need to do something with my fingers and don't want to get cold hands I just take the shells off. I've tried a lot of various combinations for my hands since they always get cold and I always need to do stuff with them and this is for sure the best I've tried.
Untrue. It's all about creating pockets of air between your skin and the cold air. If you wear gloves with mitts that fit really snug, then yes, it would most likely make your hands colder. However, if you wear mitts over gloves and have them fit comfortably (i.e have air circulating between them) your hands will be warmer.
