The old k2s ran about 4-5 cm too tall, but ever since they did they're big lineup overhaul in the 2010/2011 season, they've all ran true to size. At your height, I'd probably go for the 174s. You could go for the 179s if you go really big, are used to a bigger ski, or are growing real fast. As far as I've heard, they're a pretty durable ski and fun in the park. The bindings, however, I might avoid. At 180 lbs, you would probably have pre-release issues with the griffons, or you would end up maxing them out. Unless you're a really low-level beginner skier, I would probably go for a 14 or 16 din binding. Check out this thread for binding advice:

Just find out what din you'll be riding at, and try to have that somewhere in the middle of the din range. You don't want to have it within 2 of the minimum or maximum setting on the binding.
