Ok I know I will sound like a complete n00b when I ask this but...
I got my skis mounted and I told the shop to mount them dead center, but when I got them there was less area in the back than the front, but the center of my boots line up with the center of the ski. Yet they look mounted a little back.

It probably seems that way because of this. Your toepiece is usually a bit shorter than your heel piece. This added material in the back may make it look like there is less ski behind you, however assuming your tech did his job right then they should be dead center.
